Pancit Lomi with Egg and Chicken
Ingredients:
For the Pancit Lomi:
8 ounces fresh lomi noodles (or substitute with fresh egg noodles or thick rice noodles)
2 tablespoons vegetable oil
1 medium onion, chopped
3 cloves garlic, minced
1 medium carrot, julienned
1 bell pepper, sliced
1 cup cooked chicken, shredded (use rotisserie chicken or poached chicken breast)
1/2 cup chicken broth
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce (optional)
2 large eggs, lightly beaten
2 green onions, sliced
Salt and black pepper, to taste
1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
For Garnish (optional):
Fried garlic or garlic chips
Fresh cilantro or green onions
Lemon or calamansi wedges
Instructions:
Prepare the Noodles:
Cook the Noodles:
If using fresh lomi noodles, cook according to package instructions until tender, then drain and set aside. If using dried noodles, cook until just al dente, drain, and set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the chopped onion and cook until translucent, about 3-4 minutes.
