Don’t Lose This Recipe 
Ingredients
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup (170g) unsalted butter, softened
- 1 and 1/2 cups (300g) granulated sugar
- 3 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup (240ml) buttermilk, room temperature
Instructions
1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch (20cm) round cake pans, or line them with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In a large bowl or the bowl of a stand mixer, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
4. Add the eggs one at a time, mixing well after each addition. Scrape down the sides and bottom of the bowl as needed.
5. Stir in the vanilla extract.
6. Add the dry ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
7. Divide the batter evenly among the prepared cake pans.
8. Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
9. Remove from the oven and allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Assemble
Once the cakes are completely cooled, you can assemble your 3-layer vanilla cake by stacking the layers with your favorite frosting in between. A classic vanilla buttercream frosting works wonderfully with this cake!
