Last night, I surprised my husband with a cozy and comforting dinner of Mushroom and Wild Rice Soup. Ingredients:
- 1 cup wild rice
- 8 oz mushrooms, sliced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. In a large pot, heat olive oil over medium heat.
2. Add onions and garlic, cook until fragrant.
3. Add mushrooms and cook until browned.
