Ingredients:

For the Cod:

1 lb cod fillets, cut into portions
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp baking powder
1 tsp paprika
Salt and pepper, to taste
1 cup cold sparkling water
Oil for frying

For the Onion Rings:

2 large onions, sliced into thick rings
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp paprika
Salt and pepper, to taste
1 cup cold sparkling water

Instructions:

Heat the Oil: In a deep skillet or pot, heat oil to 350°F (175°C) for frying.

Prepare the Batter for Cod:

In a medium bowl, mix flour, cornstarch, baking powder, paprika, salt, and pepper.
Gradually whisk in cold sparkling water until smooth.

Batter and Fry the Cod:

Dip each piece of cod into the batter, letting excess drip off. Carefully place in hot oil and fry for 4-5 minutes, or until golden brown and crispy.
Remove and place on paper towels to drain.

Prepare the Onion Rings:

In another bowl, mix flour, cornstarch, paprika, salt, and pepper. Add cold sparkling water and whisk until smooth.
