Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted

For the Filling:

24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1/4 cup sour cream
1/4 cup heavy cream
1 teaspoon vanilla extract
1/4 cup pineapple juice
Zest of 1 orange
Orange food coloring (optional)

For the Swirl:

1/2 cup pineapple preserves
1/4 cup orange marmalade
Instructions:

Preheat Oven and Prepare Springform Pan:

Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.
Make the Crust:
2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
3. Press the mixture firmly into the bottom of the prepared springform pan. Use the bottom of a glass to press it evenly.
4. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.

Prepare Filling:

5. In a large mixing bowl, beat cream cheese and sugar together until smooth and creamy.
6. Add eggs one at a time, beating well after each addition.
7. Mix in sour cream, heavy cream, and vanilla extract until fully combined.
8. Divide the filling into two equal portions.
9. To one portion, add pineapple juice and mix until smooth. To the other portion, add orange zest and orange food coloring (if using), and mix until smooth.

Assemble the Cheesecake:

10. Pour the pineapple filling over the cooled crust, spreading it evenly.
11. Dollop spoonfuls of pineapple preserves and orange marmalade over the pineapple filling.
12. Carefully pour the orange filling over the pineapple and marmalade, spreading it evenly.
13. Use a knife to gently swirl the fillings together, creating a marbled effect.

Bake:

14. Place the springform pan on a baking sheet and bake in the preheated oven for 55-60 minutes, or until the edges are set but the center still jiggles slightly.
15. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.
16. Remove the cheesecake from the oven and run a knife around the edges to loosen it from the pan.
17. Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.

Slice and Serve:

18. Once chilled, remove the cheesecake from the springform pan and slice into pieces.
