🌽 Corn, Avocado, and Tomato Salad

Ingredients:

2 cups corn kernels (fresh, frozen, or canned) 🌽
1-2 avocados 🥑, diced
1 cup cherry or grape tomatoes 🍅, halved
1/4 red onion 🧅, thinly sliced
Juice of 1 lime 🍋
2 tablespoons olive oil 🫒
Salt 🧂 and black pepper to taste
Fresh cilantro 🌿, chopped (optional)

Instructions:

Prepare the Ingredients:

If using fresh corn, cook it by boiling for 3-5 minutes, then cool. If using frozen or canned, rinse and drain.

Combine the Salad:

In a large bowl, mix together corn kernels, diced avocados 🥑, halved tomatoes 🍅, and red onion slices 🧅.

Make the Dressing:

In a small bowl, whisk together lime juice 🍋, olive oil 🫒, salt 🧂, and black pepper. Adjust seasoning to taste.

Mix Everything Together:

Pour the dressing over the salad and toss gently to combine, making sure the avocado is coated well.

Garnish & Serve:

Sprinkle with fresh chopped cilantro 🌿, if desired.
