Corn, Avocado, and Tomato Salad
Ingredients:
2 cups corn kernels (fresh, frozen, or canned) 
1-2 avocados
, diced
1 cup cherry or grape tomatoes
, halved
Juice of 1 lime 
2 tablespoons olive oil 
Salt
and black pepper to taste
Fresh cilantro
, chopped (optional)
Instructions:
Prepare the Ingredients:
If using fresh corn, cook it by boiling for 3-5 minutes, then cool. If using frozen or canned, rinse and drain.
Combine the Salad:
In a large bowl, mix together corn kernels, diced avocados
, halved tomatoes
, and red onion slices
.
Make the Dressing:
In a small bowl, whisk together lime juice
, olive oil

, and black pepper. Adjust seasoning to taste.
Mix Everything Together:
