(Serves 4)

Ingredients:

For the Chicken:

4 boneless, skinless chicken breasts
Salt and freshly ground black pepper, to taste
1 teaspoon Italian seasoning
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped (oil-packed, drained)

For the Creamy Sauce:

1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 cups fresh spinach, roughly chopped
1 cup cherry tomatoes, halved
1 tablespoon fresh basil or parsley, chopped (for garnish)

Instructions:

Prepare the Chicken:

Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Once cooked, remove the chicken from the skillet and set aside.

Make the Sauce:

In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
Add the chopped sun-dried tomatoes and cook for an additional 1 minute, stirring to combine.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and cook for 3-5 minutes until it begins to thicken slightly.
Stir in the grated Parmesan cheese, allowing it to melt into the sauce and create a creamy texture.
Add the chopped spinach and halved cherry tomatoes, stirring until the spinach wilts (about 1-2 minutes). Taste and adjust seasoning with salt and pepper if necessary.

Combine Chicken and Sauce:

Return the cooked chicken breasts to the skillet, spooning some of the sauce over the chicken.
Let the chicken simmer in the sauce for an additional 2-3 minutes, allowing the flavors to meld together.

Serve:

Plate the chicken with the creamy spinach and tomato sauce on top.
Garnish with freshly chopped basil or parsley for a fresh, herby finish.

Tips:

For added richness: Stir in extra Parmesan cheese or a splash of heavy cream to make the sauce even creamier.
For extra flavor: Sprinkle some red pepper flakes over the sauce to add a bit of heat.
