Stir-fry with yam and beef

Ingredients:

1 lb beef sirloin, thinly sliced
1 lb yam, peeled and sliced into thin strips
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp cornstarch
1/2 tsp sugar
1/4 tsp black pepper
2 tbsp vegetable oil
Green onions, chopped (for garnish)

Instructions:

Marinate the beef: In a bowl, combine the beef, soy sauce, oyster sauce, cornstarch, sugar, and black pepper. Mix well and let it marinate for at least 15 minutes.
Blanch the yam: Bring a pot of water to a boil. Add the yam slices and blanch for 2-3 minutes, until slightly softened. Drain and set aside.
 
Stir-fry: Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and stir-fry for a few seconds until fragrant.
 
Add the marinated beef and stir-fry until it's browned and cooked through.
Add the blanched yam and stir-fry for another 2-3 minutes, until it is heated through.
