📋 Ingredients:

1 lb Kielbasa sausage, sliced into rounds 🌭
1 tablespoon olive oil 🧴
1 medium onion, chopped 🧅
2 cloves garlic, minced 🧄
4 cups chicken broth 🍲
2 medium potatoes, diced 🥔
2 carrots, peeled and sliced 🥕
1 can (15 oz) diced tomatoes 🍅
1 cup frozen corn 🌽
1 cup heavy cream 🧴
1 teaspoon dried thyme 🌿
1/2 teaspoon paprika 🌶️
Salt and pepper, to taste 🧂
Fresh parsley, chopped (for garnish) 🌿

📝 Instructions:

1️⃣ Cook the Kielbasa:

In a large pot, heat olive oil over medium heat. Add the sliced kielbasa and cook for 4-5 minutes, or until browned. Remove from the pot and set aside.

2️⃣ Sauté the Veggies:

In the same pot, add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

3️⃣ Simmer the Soup:

Add the chicken broth, diced potatoes, carrots, diced tomatoes, and frozen corn to the pot. Stir to combine. Bring to a boil, then reduce the heat to low and let it simmer for 15-20 minutes or until the potatoes and carrots are tender.

4️⃣ Add the Cream and Spices:

Stir in the heavy cream, dried thyme, and paprika. Season with salt and pepper to taste. Let the soup simmer for another 5 minutes to meld the flavors.

5️⃣ Combine and Serve:

Return the cooked kielbasa to the pot and stir to combine. Let it simmer for an additional 5 minutes to heat through.
Ladle the soup into bowls and garnish with freshly chopped parsley.
